This is not an easy question to answer without getting look at your commercial kitchen exhaust system. We need to know the size of the hood, what type of fuel you use to cook and how often you use the system, and how often they system is cleaned. If they hood has not been cleaned in a long time, the first cleaning may cost more, but if you go to a scheduled plan, the cost can come down.
